Vegetables like carrots and onions give a pleasant taste to this elegant dish, while coriander, lemon juice, etc., team up to perk up the zest and fragrance.

Bajra Onion Uttapam

Ingredients

  • 1/4 cup whole bajra (black millet) soaked for 8 hours and drained
  • 1.5 cups bajra (black millet) flour
  • salt to taste
  • 1/2 cup grated carrot
  • 1/2 cup finely diced onions
  • 1 1/2 tsp finely diced green chilies
  • 1 tsp garlic paste
  • 1/4 cup finely diced coriander
  • 1 1/2 tbsp lemon juice
  • 1/4 tsp turmeric powder
  • 1 1/2 tsp chili powder

Directions

  1. Add the whole bajra, ½ cup of water and salt in a pressure cooker, stir thoroughly and cook for 5 whistles.
  2. Let the steam escape before removing the lid. Remove the water and keep the boiled whole bajra aside.
  3. Add all the ingredients, along with whole bajra and 1½ cups of water, in a deep pot and blend well.
  4. Heat a non-stick tava (griddle) and lube it lightly with ¼ tsp of oil.
  5. Pour ¼ cup of batter over it and tilt the tava gently to coat the batter equally to make a circle. Cook on a medium flame, using oil, till it turns golden brown from both the sides.
  6. Repeat step 5 to make 9 more uttapams.
  7. Serve directly with fresh green chutney.
